Benjor’s Chef Extraordinaire, Kandy Tamagushiku, shares one of Benjor’s great recipes with us.
‘Using fresh Teouma prawns, lemongrass, ginger, chilli and coconut from the gardens, this is always a winner. We can rarely get Galangal in Vanuatu but we can find everything else.’
200g prawns or chicken I 1 onion I 1 clove garlic
For the paste
1 stem of lemongrass, crush the stalks I 2 Kaffir lime leaves, sliced very thinly I 1tsp Red chilli paste I 2 tbsp Fish sauce I Juice of one medium lime I Green onion or spring onion, 1 sliced thinly I ½ tsp Sugar I Coriander
Mix the ingredients for the paste. You can either use the authentic way of pestle and mortar or the new-age food processor. In a fry pan, with a little splash of coconut or soya oil, fry the paste lightly, then add the prawns or chicken. If you would like to throw in some vegetables in there, I would recommend carrots, or bok choy. Cook until just cooked then add the fresh coconut cream and cook for a couple of minutes. Finish it off with fresh coriander leaves and sliced spring onions. Serve with steamed jasmine rice.

Friday is ‘locals’ night’ with some great dinner specials. With a tennis court, mini golf course, petanque, beach volleyball, swimming pool, kayak and snorkels, make a day of it and bring the kids, they will love it.
