The Blue Marlin Club is now open


The creation of Ron and Louise Pattenden, owners of the Blue Marlin Lodge and the War Horse Saloon, one year in the making, the project resurrected the grand old building that has been sitting derelict on top of the hill for over 20 years.

Now transformed into the very flash Blue Marlin Club Vanuatu, it is part of the Blue Marlin Lodge complex that offers self-contained waterfront accommodation, Game Fishing charters and private wharf.

With spectacular views over Port Vila Harbour and great indoor and outdoor areas, the facilities at the ‘members-only’ club include great sitting areas around the swimming pool, fully air-conditioned restaurant, bar and lodge and ultra-elegant VIP room.

The focus is on a wonderful atmosphere, views and of course, food.

After a five-year stint in the kitchens of Melbourne, Blue Marlin Club welcomes back Matt Lambert as the new Executive Chef. Matt has over 12 years’ experience in the Pacific islands and brings with him a wealth of international experience. Matt’s menu is best described as contemporary Pacific cuisine with an international influence and uses only high quality, sustainable produce. “We aim to make everything in house, including breads, pasta, ice-cream and smoked specials.”

Matt believes that the key to success in Vanuatu, besides using the best produce available, is developing a great team of local chefs and as a former manager of the Vanuatu International Culinary team, Matt praises the skill level of local chefs. “Vanuatu chefs are so knowledgeable about their produce and are always inspired to learn new things, I share this passion and am looking to inspire our guests with the best food possible.”

Matt’s signature dishes include a twelve-hour braised Vanuatu beef cheek with vanilla mash and shiraz jus, and local tuna specialties changing daily. “Specials will be a feature of our menu and will be sourced from local farmers and our own game fishing boats on a daily basis.”

The Blue Marlin Club aims to take service and elegance up a notch, introducing the concept of a private club, reserved for members and their guests as well as day guests, but open to the public for lunch. It can also be reserved for weddings, birthdays and private functions and its adjacent one bedroom cottage can be booked by out of town guests wishing to stay for the weekend.

Elegantly furnished and decorated, Ron and Louise have thought of everything, including swimming pool showers, dressing room and towels available for members, sunken lounge on the stylish bar positioned to make the most of the harbour and pool views, ample and secure parking, and full air-con in the bar, restaurant and private function room.
