Spice Indian Restaurant Head Chef Sandeep Kala shares with Island Life’s readers an Indian favorite.
300 grams chicken pieces.
15 ml ghee or good quality oil.
6 cardamom seeds.
2 bay leaves
10 grms ginger and garlic paste mixed
5 grms cardamom powder
3 large onions
50grms cashew nuts
1 tspoon sugar
15 ml milk
2 tablespoons cream
15 ml melted butter
Salt and white pepper to taste.
In a saucepan, bring water to boil with a little salt. When boiling, add the chicken pieces and cook for approximately five minutes or until cooked through (with no pink colour). Strain and set aside. Slice onions and throw in a pot with a little boiling water together with the almonds and cashews. The almonds should be peeled or you can use almond flakes. Use only a little water but watch so it doesn’t burn. Cook for 15 minutes on medium heat. Once cooked, grind this mixture to a fine paste. Heat ghee or oil in a pan and lightly fry the cardamom and bay leaves tossing as you go for a couple of minutes. When fragrant, add ginger and garlic paste and stir-fry. Add the onion and nut paste and mix through. Add chicken and stir, coating all the pieces well. Add the cardamom powder, salt, sugar and pepper to taste. Finally, add the milk and melted butter and let it cook for 5 minutes at medium heat.
Garnish with cream, chopped coriander and serve with Basmati or Jasmine rice. Serves two.
