180gm diced chicken, beef, or poulet fish
Diced local vegetables (eggplant, choko, carrot, beans – whatever is in season and available)
2 tblsp medium hot curry powder
1/2 cup of beef, chicken or vegetable stock
1 tblsp sweet chilli sauce
125 ml coconut cream
80ml cooking cream
1 tblsp vegetable oil
salt to taste
Put oil in a pan and heat to medium heat. Add vegetables, meat (or fish), and curry powder and sauté for a couple of minutes until well-combined. Add stock and sweet chilli sauce and let it reduce for approximately five minutes. Add coconut and cooking cream and reduce for a few minutes further. Season to taste.
Serve with steamed rice, poppadum, pawpaw or mango, tropical fruits and salad.
